Date Caramel Flapjacks

 

 

                   

 

Ingredients

Base

  • 2 cups Oats (Gluten free if needed)
  • 4 tablespoon Coconut Oil (or any oil)
  • 6 tsp blended dates
  • 10 tbsp water
  • 3 tablespoons Maple syrup or Honey

 

 

Date Caramel

  • 300g Medjool Dates
  • 2 tbsp Coconut Oil (or any oil)
  • 8tbsp Water
  • 3 tbsp Vegan Milk
  • 1 tbsp Vanialla Extract

 

 

Top

  • Vegan White Chocolate

 

 

 

 

Instructions

  1. Put greaseproof paper in a square dish.
  2. Blend the Oats and 6 Dates in food processor.
  3. Add in the Honey/Maple Syrup and Oil.
  4. Spread the base ingredients in the prepared dish and press down with the back of a spoon to compact it.
  5. Place in freezer to set while you make the caramel.
  6. To make the Date Caramel- Blend the Dates,  Oil, Water, Vegan Milk and Vanilla Extract in a food processor.
  7. Spread this mixture on top of the oats.
  8. Melt some white chocolate and drizzle it on top.
  9. Place in freezer for 15 minutes or longer to harden.
  10. When ready to cut, pour some boiling water in a bowl/round plate and dip a sharp knife in the hot water. Dry off with some kitchen roll and slice down on the bake to cut into squares. The heated knife allows you to cut in perfect straight squares.
