Carrot Cake Cranberry Squares
These Carrot Cake Cranberry Squares are the perfect Breakfast on-the-go, Midday snack with your coffee, or even as Dessert served with yoghurt & some berries!
The ingredients are Allergen Friendly:
✅Gluten Free Oats can be used
Ingredients can also be substituted for your personal preferences 😌
-100g Oat Flour (Oats blitzed in food processor)
-1 teaspoon baking powder
-2 Bananas mashed
-2 Carrots grated
-3 tablespoons Coconut Oil
-2 tablespoons Honey/Maple Syrup
-150ml Plant Milk/Milk
-1 Cup of Cranberries
-1 teaspoon Cinnamon (optional)
1️⃣Preheat oven to 150c/350f and line a baking tin with greaseproof paper.
2️⃣Mash bananas in a bowl with a fork and mix in the coconut oil and honey.
3️⃣Add the Oats Flour, Oats, Baking Powder, Cinnamon(optional), milk and grated carrots.
4️⃣Fold in the Cranberries.
5️⃣Pour the mixture into the prepared tin and spread evenly with a spoon. Bake for 25-30 mins until golden on top. If you don’t want the inside to be soft & moist, leave it in the oven for 10 more mins.
6️⃣Remove from oven and allow to cool.
