Baking Tips:

Medjool Dates: When I’m using dates in the food processor I always soak them in a bowl of hot water and drain them fully before use. This allows them to break up more easily and may prevent your food processor from breaking!
Oats: Gluten free oats can used for individuals that are Gluten Free
Vegan: Maple Syrup can be substituted instead of Honey

 

INGREDIENTS

Base

  • 200g Oats
  • 5-6 Medjool Dates
  • 3 tbsp Maple Syrup or Honey
  • 4 tbsp Coconut Oil
  • 4 tbsp Water

Caramel Layer

  • The rest of the packet of 300g Medjool Dates
  • 1 tbsp Coconut Oil
  • 6 tbsp Water
  • 1 tsp Vanilla Extract (Optional- but tastes better with it added)

 

Top Layer

  • 100g Oats
  • 1 tbsp Maple Syrup or Honey
  • 2 tbsp Coconut Oil
  • 2 tbsp Water

METHOD

  1. Put greaseproof paper in a square dish and preheat the oven to 150°C/350°F.
  2. Blend the Oats and 6 Dates in a food processor.
  3. Add in the Honey/Maple Syrup and Coconut Oil.
  4. Spread the base ingredients in the prepared dish and press down with the back of a spoon to compact it.
  5. Place in freezer to set while you make the caramel.
  6. Blend the ingredients for the caramel: dates, coconut oil, water and vanilla extract (optional).
  7. Spread this mixture on top of the base.
  8. Crumble the Top Layer of Oats mixture on top of the Date layer.
  9. Bake in oven for 18-20 mins.
  10. Let them cool completely before slicing. You can also freeze them before slicing which prevents them from crumbling.
  11. These squares can be stored and eaten straight from the freezer and brought with you as travel foods too!
